Blackberry Cobbler
Because good food should not stop once Thanksgiving has passed us by, here is a recipe modded from: Blackberry Cobbler II at allrecipes.com.
Ingredients:
Dough
1/2 cup sugar (dough)
1/2 tsp cinnamon
2 tsp vanilla extract
2 cup flour
2 tsp baking powder
1 tsp salt
12 tsp cold butter
1/2 cup boiling water
Filling
2/3 cup sugar (berries)
1/2 tsp cinnamon
2 Tbs cornstarch
1/4 cup cold water
juice from 1/2 lemon
6 cups blackberries
1) Mix flour, 1/2 cup sugar, baking powder, salt, vanilla, 1/2 tsp cinnamon. Cut in cold butter and mix. Stir 1/2 cup boiling water and mix with large spoon or spatula until resembles "coarse crumbs." Make sure that its still clumpy and there are still blobs of butter.
2) In skillet, dissolve cornstarch in cold water. Mix 2/3 cup sugar, lemon juice, cinnamon, blackberries. Bring to a boil while stirring. Transfer mix to 9x13 pyrex dish. Drop dough mix on top of berry mix in clumpy spoonfuls. Try to cover as much of the berries as possible, but it's fine if some of the berries peek out.
3) Bake 25 mins in a preheated 400F oven until dough starts browning.
